These Lettuce Wraps Will Have You Flexin’ at the Gym!

Alright friends, grab a protein shake and get ready because I’m about to share the recipe that’s been fueling my workouts lately.

Those low-carb, high-protein Asian chicken lettuce wraps from P.F. Chang’s are pretty tasty, but between you and me, mine are WAY better — and way healthier too!

I’m talkin’ packed with muscle-building protein to help you crush your goals.

These bad boys have been my go-to post-workout meal for weeks now.

They’re loaded with perfectly seasoned and tender chicken breast that’ll have your muscles recoverin’ in no time.

But more than that, they’re simply delicious.

The sauce is to die for — rich, tangy, and full of flavor from peanut butter, soy sauce, and a secret ingredient (hint: it rhymes with trader ho-ay’s sweet chili sauce).

Once you wrap it all up in crisp lettuce and devour it, you’ll be ready for round two in the weight room.

Alright, time for the deets.

Chicken Lettuce Wraps

Prep Time: 15 mins
Cook Time: 25 mins
Servings: 6

Ingredients:

  • 2 lbs boneless, skinless chicken breasts, diced
  • 2 tbsp coconut or avocado oil
  • 1 onion, minced
  • 1 red bell pepper, diced
  • 8 oz water chestnuts, diced
  • Butter lettuce leaves
  • Optional: crushed peanuts
  • Sauce:
    — 1/3 cup soy sauce
    — 1/3 cup hoisin sauce
    — 2 tbsp sesame oil
    — 2 tbsp rice vinegar
    — 2 tbsp peanut butter
    — 2 tbsp honey
    — 1 tbsp sweet chili sauce
    — 1/2 tsp garlic powder
    — 1/4 tsp ginger

Instructions:

  1. Make the sauce by whisking all ingredients together in a bowl until smooth. Let it thicken up while you prep the filling.
  2. Heat oil in a skillet over medium high. Add chicken and cook until no longer pink, about 10 mins.
  3. Add onion, bell pepper, and water chestnuts. Cook 5 more mins until softened.
  4. Add sauce and simmer 5 mins to allow flavors to blend.
  5. Serve chicken filling in lettuce leaves and top with crushed peanuts if desired. Enjoy!
